We love to make whole wheat bread. Here's my recipe! I suggest a strong mixer - there are many on the market, and while I use a Bosch currently, there are other mixers that are equally good. A strong motor will give better long-term use. I also mill wheat using the Nutrimill. Wheat berries can be found online, co-op, or Azure Standard (find a local drop!) I've always used Prairie Gold by Wheat Montana, a white hard wheat.
The recipe for 2-3 loaves:
- 2 c. Warm Tap Water
- 3 c. Milled Whole Wheat Flour - First Addition
- 1 Tbsp. Dough Enhancer
- 1/4 c. Olive Oil
- 2 Tbsp. Honey
- 1 1/2 Tbsp. Yeast
- 5 c - 6 c. Additional wheat flour
- 3 tsp. Sea Salt

My pictures have cinnamon wheat bread. The filling is easy. Simply roll out the portioned dough for the loaf into a rectangle. On top, spread GOOD butter, brush with maple syrup, sprinkle 1/2 c. brown sugar, and spices. Cinnamon, cloves, your choice. Roll the dough back into a loaf and bake. And make a latte 🙂
